Chicken & Gravy
Sometimes I literally crave this meal because it is the perfect comfort food. Be prepared to feast and pass out! This chicken & gravy recipe takes very little prep and only a few hours in the oven!
Ingredients:
- 6 lb whole chicken
- 1 14 oz. can chicken broth
- 2 tsp olive oil
- 2 cups frozen sliced carrots
- 2 cups frozen peas
- 2 cloves garlic, minced
- 1/2 tsp ground black pepper
- 1/2 tsp all-spice
- 1/2 tsp ground sage
- 1/2 tsp ground oregano
- 2 tbsp cornstarch
- 1/4 cup water
- 1 14 oz. can chicken broth
- 2 tsp olive oil

- 1/2 tsp all-spice
- 1/2 tsp ground sage
- 1/2 tsp ground oregano
- 2 tbsp cornstarch
- 1/4 cup water
Instructions:
1) Preheat oven at 350 F.
2) While oven is preheating, place chicken in a deep roasting pan. Add chicken broth, carrots, peas and garlic.
3) Spread olive oil over top of chicken. Sprinkle on ground black pepper, all-spice, sage and oregano.
4) Once oven has preheated, place chicken in for 2 hours. Check every 30 minutes to see if water should be added.
5) Once chicken is done, remove roasting pan from oven. Next, transfer chicken to a baking or serving dish. It will be tender and fall apart; use caution.
6) To make gravy: Remove 2 cups drippings from roasting pan and warm in a saucepan on stove. In a mixing cup, combine 1/4 cup water and 2 tbsp cornstarch. Combine with drippings and boil for one minute, stirring constantly.
7) Enjoy!
Bonus tip #1) This goes great over rice or mashed potatoes.
Bonus tip #2) If you have a large slow cooker, you can cook chicken for 6-7 hours instead of using the oven.
