Chocolate Spice Cupcakes
with
Lemon Buttercream Frosting
Nom Nom Nom....
This combination might sound a little strange, but lemon buttercream is the perfect compliment to these chocolate-cinnamon-nutmeg cupcakes! They have a ginger flavor, although they contain no ginger. These are excellent fall-time desserts!
For the cupcakes...
Ingredients:
- 1 cup milk
- 1 tsp apple cider vinegar
- 3/5 cup granulated sugar
- 1/3 cup oil OR apple sauce
- 1 1/2 tsp melted butter
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup white all-purpose flour
- 1/3 cup cocoa powder
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 tsp apple cider vinegar
- 3/5 cup granulated sugar
- 1/3 cup oil OR apple sauce
- 1 1/2 tsp melted butter
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup white all-purpose flour
- 1/3 cup cocoa powder
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions:
1) Mix milk and vinegar in a bowl.
Combine cinnamon, nutmeg and melted butter. Add to milk & vinegar.
Add sugar & oil/applesauce.
There will be little bits of spice floating at the top - it's ok!

2) In a separate bowl, combine flour, cocoa, baking soda, baking powder and salt.

3) Combine milk/vinegar mixture with flour mixture. Combine thoroughly! Get as many bumps out as possible, using a beater if needed.

4) Pour the batter! I used this cute fall pan (a birthday gift from my mother-in-law - she knows me well!) and I used a regular pan for the extra batter. This recipe will make 12 regular size cupcakes.

5) Bake 19 minutes @ 350 degrees. Remove & cool before icing!
The icing can be made while the cupcakes are baking :)
Here's what you'll need:
- 1 stick of softened unsalted butter
- 3 cups powdered sugar
- 1 lemon, zest & juice
- 1 tsp vanilla extract
- 3 cups powdered sugar
- 1 lemon, zest & juice
- 1 tsp vanilla extract
This icing is so very easy to make! Here's what you do:
1) Use a grater to remove zest from the outside of a lemon.

2) Cut your lemon in half and squeeze the juice out of both halves.

3) Add butter, powdered sugar and vanilla extract to the lemon juice and zest.

4) Beat for about 4 minutes on low until the icing is light and fluffy. If you want to add food coloring, now's the time!
Now...for the fun part!!! Ice your cupcakes and enjoy!
