Healthy Ramen Noodles
This low sodium, nutritious recipe makes a LOT of food for under $5. I made it somewhat bland and Emma loved it. You could spice it up a bit by using additional chicken boullion, more soy sauce and some all-spice.
Ingredients:
- 1 package Thai Kitchen Asian noodles (looks like Ramen noodles, except there's way more in there!)
- 1 regular size can low-sodium chicken broth
- 2 tbsp soy sauce (or 1 packet soy sauce)
- 1 tbsp cornstarch
- 1/4 tsp ground ginger (optional)
- 16 oz. Pictsweet frozen stir fry mix
- 1 boneless, skinless chicken breast (or more if desired)
1) Boil noodles according to package instructions. Drain noodles. Mix broth, soy sauce, cornstarch and ginger. Combine in pot and set to medium heat.
2) Dice chicken as desired and cook in olive oil over medium-high heat for 3-5 minutes, flipping once (will be slightly pink).
3) Put stir fry mix in the skillet with chicken and cook per package directions.
4) Add stir fry mix to noodles and cook on high until almost all of the liquid has evaporated. If you wanted to season to taste, now would be the time!
5) Feast and enjoy!
