Spinach Scrambled Eggs
A professional chef might gawk, but a mommy-chef has to be efficient...am I right? When your baby is fussy or your toddler is just plain crazy, it's not really feasible to spend a long time in the kitchen. For lunch today, I suddenly realized we really didn't have much. No leftovers, no fresh veggies (with the exception of spinach)...If you have some spinach, a few eggs, some milk and cheese, you can whip this up in about 10 minutes. Easy, easy, easy!
Here's the super short ingredient list:
- 2 cups fresh, washed spinach leaves
- 1 teaspoon butter or olive oil
- 4 large eggs
- 1/4 cup mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup milk
- salt & pepper to taste

Directions:
Step 4) Enjoy!
Add salt and pepper to taste. Enjoy!
This recipe can be very easily modified! Try adding cooked diced ham, chicken, sausage or lunchmeat. Onions and/or mushrooms would also compliment this; just dice them, cook them down a bit and add the spinach from there.
